Smoked Paprika Lobster Bisque

2 Tbsp. butter
1 quart vegetable stock
1 15 oz. can tomato puree
1 cup cooked lobster meat, cut into small pieces
3 Tbsp. flour
1 cup heavy cream
2 tsp. The Spice Hunter Smoked Paprika
salt and pepper to taste
chopped chives for garnish (optional)

In a large stockpot, combine stock and tomato puree. Bring to a boil and simmer for 5 minutes. In a small saucepan over low heat, melt the butter. Whisk flour into melted butter until the mixture is smooth. Add 1 cup of the tomato mixture to the flour mixture, mix well, then add to the large stockpot with the remaining tomato mixture and bring to a boil. Add the lobster meat and reduce heat to a simmer for 10 minutes. In a small bowl, blend together the cream and the smoked paprika. Add the cream mixture to the stockpot and simmer another 5-10 minutes or to desired thickness. Add salt and pepper to taste and serve hot, with chopped chives, if desired.
