Sesame Chicken Peanut Noodles

1 rotisserie chicken, meat removed and shredded
1 lb. fettuccine noodles
⅓ cup vegetable oil
⅓ cup peanut butter (smooth or crunchy)
2 Tbsp. soy sauce
2 Tbsp. red wine vinegar
4 Tbsp. The Spice Hunter Korean BBQ Global Fusion Rub
2 tsp. honey
2 Tbsp. sesame oil, divided
2 bunches green onions, coarsely chopped
1 red bell pepper, sliced into matchstick-sized pieces
1 cup chopped salted peanuts

Cook fettuccine to al dente according to package directions. Drain, rinse in cold water and drain again. While fettuccine is cooking, whisk together vegetable oil, peanut butter, soy sauce, vinegar, Korean BBQ Global Fusion Rub, honey and 1 Tbsp. of sesame oil until smooth. Place the cooked pasta in a large bowl and toss with remaining 1 Tbsp. sesame oil. Add the chicken, green onion and bell pepper to toss to combine. Mix in the dressing and top with peanuts.
