Savory Coconut Rice

2 cups water
1 13.5 oz. can coconut milk
2 Tbsp. The Spice Hunter Coriander Lime Global Fusion Rub
1½ cups jasmine rice
Salt to taste

Rinse rice in a fine mesh strainer until the water is clear; set aside. Bring water, coconut milk, and rub to a boil in a medium saucepan. Add rice to saucepan, stir, cover, reduce heat, and continue cooking, stirring part way through, until liquid is absorbed, about 20 minutes. Let sit 5 minutes and then salt to taste, if desired.
