Prime Rib

For a 4 lb. prime rib (standing rib roast):
1 Tbsp. plus 1 tsp. crushed garlic
1 tsp. The Spice Hunter Mediterranean Rosemary
1 tsp. The Spice Hunter French Thyme
1½ tsp. salt
1 tsp. The Spice Hunter Coarse Black Pepper
2 Tbsp. vegetable oil
1 Tbsp. brown sugar

Combine garlic, herbs, salt, pepper, oil and sugar in a small bowl. Rub entire roast with garlic mixture and place rib-side down in a baking dish or roasting pan. Heat oven to 475°F. Roast for 20 minutes, then decrease oven temperature to 325°F. Cook to an internal temperature of about 135°F for medium-rare or 150°F for medium (about 1 1/4 to 2 hours, depending on desired temperature), remove from oven and let rest for 15 minutes before carving.
