Orange Fennel Pork

1 Tbsp. The Spice Hunter India Whole Fennel Seeds, coarse ground
Juice of 1 orange
4 cloves of garlic, minced
1 cup brown sugar
1 tsp. salt
½ tsp. pepper
2 lbs. pork tenderloin
1. Combine fennel seeds, orange juice, garlic, sugar, salt and pepper in a bowl. Mix to make a paste.

2. Place pork in a roasting pan and rub paste all over the meat.

3. Cook at 400℉ until done or a meat thermometer reads 160℉ when inserted.
