Lemon Sugar Cookies

Lemon Sugar:
½ cup granulated sugar
Zest of 1 lemon

1 cup salted butter, softened
2 cups sugar
2 eggs
½ tsp. The Spice Hunter Pure Vanilla Extract
1½ tsp. The Spice Hunter Pure Lemon Extract
1 Tbsp. lemon zest
1 tsp. baking powder
¼ tsp. baking soda
3 cups all-purpose flour
Lemon Sugar:
1. Combine sugar and zest in a small bowl. Stir with a fork for 1 minute, making certain that zest is well incorporated into the sugar. Cover and let rest.

1. Preheat oven to 350°F. Coat a rimmed baking sheet with non-stick cooking spray.

2. Cream butter and sugar together in a large bowl until light and fluffy. Add eggs, vanilla, lemon extract and lemon zest, stir to combine.

3. Add baking powder and baking soda, mix; then add flour one cup at a time, mixing thoroughly between additions.

4. Drop dough by heaping spoonfuls onto prepared baking sheet. Bake for 10-15 minutes, or until edges begin to brown.

5. Remove from oven and sprinkle each cookie generously with lemon sugar.
