Italian Wedding Soup

For meatballs:
1 lb. ground turkey
½ lb. mild Italian sausage
2 tsp. The Spice Hunter 100% Organic Poultry Seasoning
1 egg
2/3 cup breadcrumbs
½ cup Parmesan cheese
¼ cup milk
For soup:
2 Tbsp. olive oil
1 cup diced celery
1 cup diced onion
1 cup sliced carrots
3 quarts chicken broth
1 tsp. The Spice Hunter 100% Organic Poultry Seasoning, plus more to taste
1 cup small pasta shells
1 lb. chopped spinach leaves

Combine meatball ingredients in a bowl and mix well. Form 1€? meatballs and place in a large skillet. Cook over medium heat, turning occasionally, until browned and cooked through. While meatballs are cooking, heat oil in a large stockpot over medium heat. Add celery, onion and carrots, cooking until softened. Next, add broth and poultry seasoning to stockpot and bring to a boil. Add pasta and cook about 10 minutes or until pasta is tender, then add meatballs and spinach. Cook for another minute or until spinach is wilted.
