Honey Poppy Chicken

1 whole chicken
¾ cup honey
¾ tsp. The Spice Hunter Ground Ginger
¾ tsp. The Spice Hunter Ground Mustard
¾ tsp. The Spice Hunter Granulated California Garlic
1 Tbsp. plus 1 ½ tsp. The Spice Hunter Dutch Poppy Seeds
salt and pepper to taste

Preheat oven to 450°F. In a small bowl, combine honey, ginger, mustard, garlic and poppy seeds; set aside. Sprinkle chicken with salt and pepper. Place chicken in a roasting pan in the oven for 10 minutes. Carefully remove roasting pan from oven, coat chicken with about ½ of the prepared glaze and return to oven. Reduce heat to 350°F, and cook chicken until internal temperature reaches 160°F. Coat with remaining glaze and cook another 10 minutes or until done. Let chicken rest 5-10 minutes before carving.
