Elegant Saffron Soup

2 onions
3 medium potatoes
3 leeks
2 slices bacon, diced
3 Tbsp. butter
1 tsp. The Spice Hunter Ground India Turmeric or 100% Organic Ground Turmeric
1 pkg. The Spice Hunter Spanish Mancha Saffron Strands
¾ cup chicken stock
¾ cup milk
½ cup cream
salt & pepper
juice of 1 lemon
2 Tbsp. white wine

Slice onions, potatoes, leeks, bacon. Sauté in butter until onion is translucent. Add turmeric and ½ pkg. saffron. Cover with stock and milk, simmer gently 45 min. Let cool, put through a blender or food processor, then a fine sieve. Put in top of a double boiler over boiling water and stir in cream. Season to taste with salt and pepper. Add lemon juice. Just before serving, add remaining ½ pkg. saffron which has been boiled in the white wine briefly. Garnish with lemon slices, chopped chives and creme fraiche.
