Easy Cioppino

2 Tbsp. olive oil
1 large onion, chopped
1 celery stalk, chopped
½ tsp. The Spice Hunter Oregano
½ tsp. The Spice Hunter Thyme
1 The Spice Hunter Bay Leaf
1 can (14.5 oz) diced tomatoes
½ cup white wine
1 cup vegetable broth
½ cup clam juice
12 clams
½ lb. cod or other white fish
½ lb. shrimp, peeled and deveined
Salt and The Spice Hunter Black Pepper to taste

In a large pot, heat the oil over medium heat. Add the onion and celery and sauté until softened, about 5 minutes. Add the oregano, thyme, and bay leaf and cook for 1 more minute, until fragrant. Add the tomatoes, wine, broth, and clam juice, and bring to a simmer. Add the clams and cover. Cook for about 10 minutes, until the shells have opened. Discard any clams that do not open. Add the fish and shrimp, and cook covered for an additional 3-4 minutes, until the fish is flaky and the shrimp are pink. Season with salt and pepper. Serve with sourdough bread.
