Dill Herb Fillets

2 lbs. fillets of red snapper or a firm-fleshed fish
¾ tsp. salt
½ tsp. The Spice Hunter Peppercorn Medley Fresh Twist Grinder
½ cup olive oil
1½ cups fresh minced parsley
1 Tbsp. The Spice Hunter Freeze Dried Shallots
1 tsp. The Spice Hunter 100% Organic Dill Weed
pinch of The Spice Hunter 100% Organic Oregano
¼ cup fresh squeezed lemon juice

Arrange fish in a single layer in an oiled shallow baking dish. Sprinkle with oil, parsley, shallots, dill weed and oregano. Bake in a preheated 350°F oven until flesh barely separates when tested with a fork, 15-20 minutes. Baste twice with pan juices while baking. Remove fish to a serving dish. Blend lemon juice into pan drippings, then pour over fish.
