Chicken Salad in Lettuce Cups

This chicken salad recipe skips the mayo in favor of a refreshing vinaigrette with briny capers and olives. Serve in a butter lettuce leaf for an elegant presentation.
¼ cup olive oil
¼ cup white wine vinegar or white balsamic vinegar
1 tsp. honey
1 tsp. The Spice Hunter Italian Seasoning Blend
Salt and The Spice Hunter Black Pepper to taste
2 cups cooked chicken, cubed
1 Tbsp. The Spice Hunter Pine Nuts
1 Tbsp. capers, drained and rinsed
¼ cup kalamata olives, chopped
¼ cup red onion, minced
1 celery stalk, minced

In a large bowl, whisk the oil, vinegar, honey, Italian herbs, salt, and pepper. Add the remaining ingredients and refrigerate until ready to serve. Serve in butter lettuce leaves or between slices of sourdough bread.
