Cheddar Bacon Muffins

2 cups flour
¼ cup sugar
2 tsp. baking powder
¼ tsp. salt
2 Tbsp. The Spice Hunter Chopped Chives
1 cup shredded cheddar cheese
½ lb. bacon, diced, cooked crisp & cooled
¾ cup milk
¼ cup vegetable oil
1 egg

Preheat oven to 400°F. In a large bowl combine flour, sugar, baking powder, salt and chives. Mix in cheese and cooled, cooked bacon. In a small bowl combine milk, oil and egg, then stir into dry mixture just until moistened. Divide batter into 12 greased or lined muffin cups. Bake for 20 minutes or until tops are lightly browned.
