Caribbean Corn and Pepper Saute

4 cups sweet corn
½ green bell pepper, diced
½ red bell pepper, diced
1 tsp. The Spice Hunter 100% Organic Thyme
3 Tbsp. olive oil
½ cup half and half or coconut milk
½ tsp. salt
black pepper to taste

Heat oil in a large skillet. Add corn, bell peppers and thyme. Cover and cook over medium heat for 2 minutes. Reduce heat. Add half & half or coconut milk and season with salt and pepper. Cook uncovered, for 5-7 minutes over low heat, until liquid is absorbed. Stir often during cooking. Serve 6.
