Black Pepper Buttermilk Biscuits

2 cups all purpose flour
2 tsp. baking powder
¼ tsp. baking soda
1 tsp. salt
1 ½ tsp. coarse ground The Spice Hunter Black Peppercorns Organic Grinder
½ cup butter
¾ cup plus 2 Tbsp. buttermilk

Combine flour, baking powder, baking soda, salt and pepper together in a large bowl. Cut butter into flour mixture until it resembles coarse crumbs. Stir in ¾ cup buttermilk until just combined, then pour dough onto a floured surface and gently pat dough into a rectangle. Fold the rectangle of dough into thirds, like a letter, turn, flatten slightly and fold into thirds again. Repeat folding and turning two more times. Roll dough to a ½ inch thickness, then use a round biscuit cutter (or a large cup) to cut out biscuits; reroll remaining dough and continue cutting until all the dough is used up, making about 12 biscuits. Heat oven to 425°F. Place biscuits on a greased baking sheet, brush with remaining 2 Tbsp. buttermilk and bake for about 15 minutes until light golden brown.
