3 Tbsp. butter
2 tsp. The Spice Hunter Curry Seasoning or 100% Organic Curry Seasoning
2 cloves garlic, minced
1 cup broth, cream or coconut milk
1-2 cups of pieces of lamb, chicken, beef, pork, shrimp, tofu or fish
Saute curry seasoning in butter. Add garlic, cook until soft. Add liquid and bring to a simmer. Stir in meat, and cook on low heat until done. Optional: in the last few minutes of cooking, add raisins, chopped nuts, apples, bananas and/or coconut. Serve over rice with Pudine ka Rayta or chutney. Pudine ka Rayta Mix 3 Tbsp, minced onion and fresh mint, 1/2 tsp. salt, 1/8 to 1/4 tsp. ground red pepper, 1 cup plain yogurt. Blend well and taste for seasoning. Cover tightly. Chill for at least 1 hour. Garnish with mint leaves.
