Balsamic Chicken with Caramelized Onions

3 Tbsp. olive oil, divided
1 large onion, thinly sliced
1½ lbs. boneless, skinless chicken breasts
The Spice Hunter California Garlic Salt
The Spice Hunter Coarse Black Pepper or 100% Organic Coarse Black Pepper
¼ cup Balsamic vinegar
1 (14.5oz.) can diced tomatoes
2 tsp. The Spice Hunter California Basil or 100% Organic Basil

1. In a medium skillet, cook onions in 1 tablespoon olive oil over medium-low heat, covered, until very soft and golden brown, about 10 to 15 minutes. Add a few teaspoons of water as needed to prevent over-browning. Remove onions from skillet and set aside. 2. Add remaining 2 tablespoons olive oil to pan and increase heat to medium-high. Season chicken with garlic salt and pepper, then add to hot oil and brown on all sides. 3. Add onions back to pan along with balsamic vinegar, tomatoes and basil. Cover, bring to a boil, reduce heat and simmer until chicken is done, about 15-20 minutes.
